  • peeled, seeded, and sliced
  • 1 small green bell pepper/capsicum, chopped
  • 2 large scallions/spring onions, chopped
  • 1 rib celery, chopped
  • 1 small carrot, grated
  • ½ cup/15 g minced fresh parsley
  • ¼ cup/60 ml Vegan “Mayonnaise” or Vegenaise
  • 1 tbsp red wine vinegar
  • 2 tsp sugar
  • 1 tsp dried dill
  • ½ tsp salt
  • ½ tsp freshly cracked black pepper
