  • 2 tbsp taco seasoning mix
  • 1 tbsp vegetable oil
  • 1/2 C. chopped onions
  • 1/2 C. chopped celery
  • 2 tsp ground cumin
  • 1/4 tsp ground black pepper
  • 1 C. water
  • 3 (14 oz.) cans chicken broth
  • 1 C. diced tomatoes
  • 1 tbsp chopped fresh cilantro
  • 1 C. shredded Cheddar cheese
  • 1 C. crushed tortilla chips
  • 1 avocado - peeled, pitted and diced

  1. Set your oven to 350 degrees F before doing anything else.
  2. Arrange the chicken breasts onto a baking sheet and sprinkle with 1 tbsp of the taco
    seasoning mix evenly.
  3. Cook in the oven for about 30-35 minutes.
