Greek cucumber salad

  • 1 cucumber
  • 1 teaspoon salt
  • 3 tablespoons finely chopped fresh mint
  • 1 garlic clove, crushed
  • 1 teaspoon caster sugar
  • 200ml/7fl oz Greek-style yogurt


  • Peel the cucumber and cut in half
    lengthways. Remove the seeds with
    a teaspoon and discard. Slice the
    cucumber thinly. Put in a bowl, and
    sprinkle with the salt. Toss through,
    and leave for at least 15 minutes.
  • Combine the mint, garlic, sugar
    and yogurt in another bowl.
  • Rinse the cucumber in a sieve
    under cold running water to flush
    away the salt.
  • Drain well and combine with the
    yogurt mixture. Chill for 15 minutes
    and serve.
